Eggplant

The eggplant (Solanum melongena) is a vegetable native to India, low in calories and rich in water, fibre and potassium. Its purple skin contains antioxidants and aids digestion.

It is very demanding in heat: it grows best between 22 and 30 °C and does not tolerate cold. The first harvest comes 70 to 90 days after transplanting.
